Almond & Apricot Tart Base:

2 cups activated almonds

1/2 cup mixture of activated pumpkin and sunflower seeds

2 tbsp cacao nibs

1 cup apricots, chopped

1/3 cup dessicated/ shredded coconut

1 tbsp cacao powder

1 tbsp vanilla extract

2-4 tbsp coconut water/filtered water, start with the lesser amount and add more if mixture is dry

Process all ingredients except for the coconut water. Transfer to a bowl. Add coconut water slowly while stirring till the mixture comes together. Press into a lightly greased/ parchment lined spring form tin or pie dish. Refrigerate till the mousse is prepared.


Coghurt Chocolate mousse:

3 medium avocados

2 heaped dessert spoons of cacao powder

1 tsp vanilla extract

2 heaped spoonfuls of Coghurt

1/4 cup organic maple syrup or more to desired sweetness

1/4 cup coconut water or filtered water

Blend all of the ingredients till a smooth and creamy consistency is achieved. Taste and add more sweetener or liquid if required. Pour mousse onto the tart base. Decorate with seasonal fruits and refrigerate till ready to serve.
