Nutty Fat Bomb Gelee

This Nutty Fat Bomb Gelee is a tasty, gutsy snack you can enjoy and get you energised on walks. So what is a fat bomb gelee, you may ask? It’s a gut healing gelee with a lot of healthy fats from activated nuts and grass fed ghee. It has a texture that is similar to quince paste but has a creamy feel in the mouth. It is made with activated nuts, grass fed gelatin, ghee, honey. I also add in a small amount of beetroot for colour. This Nutty Fat Bomb Gelee is a great way to enjoy gelatin for the young and old. So this one is definetly a crowd pleaser. I adapted this from a Quirky Cooking recipe, and this is our version. I hope you enjoy!

Nutty Fat Bomb Gelee

Nutty Fat Bomb Gelee

Equipment

  • Thermomix or Stove

Ingredients
  

  • 100 g dried cashews, soaked for five hours drained and rinsed
  • 25 g beetroot
  • 180 g water
  • 60 g honey
  • 3 tbsp gelatin
  • 75 g ghee

Instructions
 

  • For Thermo mix, add all ingredients except for gelatin and ghee into the magimix.
  • ¬†Blend it all up at speed 17, slowly increasing it from speed 4-17, for one minute.
  • Once the mixture is well blended, add in ghee.
  • Stir at speed 3, for twenty seconds.
  • Sprinkle gelatin in and allow to cook at 80 degrees celsius at speed 3 for six minutes.
  • Pour into lined dish and chill in the fridge for one hour, or twenty minutes in the freezer until firm.
  • For stove, add all ingredients except for gelatin and ghee in a blender. Blend until smooth.
  • Add ghee and blend until combined.
  • Transfer to a medium pot and sprinkle in gelatin. On medium-low heat, stir in gelatin until dissolved. This will take about six minutes.
  • Pour into lined dish and chill in the fridge for one hour, or twenty minutes in the freezer until firm.
