A different abundance comes with every season. This is especially true for us in Queensland due to our mild winters. Summer comes with the abundance of stone fruits, berries and most commonly tropical fruits. Last summer was a great season for papayas. We got our hands on a stack of fresh, firm green papayas and couldn’t help but ferment them. A few months later we’re enjoying what has become one of our favourite seasonal, green papaya kraut.
Most of our vegetables are fermented for about a month. We find that a month at room temperature is a good balance between time and bacteria count. The longer you leave vegetables to ferment (within reason), the more time the bacteria have to multiply, similarly more complex flavours result. After a month the bacteria production begins to plateau. Every now and then we decide to ferment for much longer, just for fun. This vintage green papaya kraut is fermented for upwards of 12months. As a result of the long fermentation we get trillions of probiotics along with a more rounded and subtle flavour. Try some and see what you think.

Keep your Gutsy Vintage Green Papaya Kraut refrigerated before opening if possible. But if you can’t keep your kraut in the fridge for a while, it’s not a big deal. Because fermentation is a preserving process Gutsy kraut will keep for weeks out of the fridge. If you keep your kraut out of the fridge it will keep fermenting. The only problem is that carbon dioxide is a by-product of fermentation. So if keep your Kraut out of the fridge for too long, you may be sprayed with kraut juice first time you open it. It’s not an unhealthy, just messy.
Gutsy Kraut is best kept in the fridge. The only reason for this is to inhibit the growth of mould.
