Gutsy Box – Christmas Fermented Foods



At a few recent events we made a Gutsy Box with Christmas Fermented Foods available for purchase.  Due to it’s popularity we have decided to make these fermented foods available online for you.  Hopefully these fermented foods make this Christmas a GUTSY one for you! Each Box comes with the following ferments: 

  • Red Cabbage Citrus Fennel Kraut (usually $14)
  • Our latest seasonal surprise! (usually $14)
  • Green Cabbage and Green Papaya Kraut – a special 6 month ferment (usually $14)
  • YOUR CHOICE of 48hr Cookie dough OR Sweet Adzuki miso (usually $10) – Let us know in the “order notes” what your preference is.
  • FREE 1 year fermented fruit shrub (probiotic cordial) for some Christmas cheer! (usually $8)

About the Krauts

These 3 special seasonal sauerkrauts are all limited products.  Sometimes we see some seasonal fresh produce and can’t help but ferment it.  These are small batches, get it while they last.  All these Fermented Krauts are (of course): made with certified organic ingredients,  wildly fermented in oak barrels, made with locally sourced produce,  kept raw and unheated for you and your gut.

About the Fermented Sourdough Cookie Dough

Made with Organic Almond Meal, Organic Spelt, Organic Coconut Sugar, Ghee, 100% dark chocolate and an organic buckwheat Sourdough Starter.  This has been fermented for a little over 2 days so that it’s a little tangy and a little fudgy. I can’t stop eating it.  This fermented cookie dough contains no eggs or milk, so it’s designed to be eaten raw.  If you you want to bake it, spoon it onto a tray, and put into the oven at 180C for 10 minutes.  Yummy either way.

About the Adzuki Miso

This is a fermented Adzuki (AKA red) bean miso.  It contains no soy beans.  The only ingredients are: Adzuki Beans, Koji rice starter (rice + aspergillus oryzae), and  naturally evaporated sea salt.  Fermented for 4-5 weeks, it’s a sweet miso with umami after notes. Perfect for drizzling on roast veggies, added to caramel sauce, whisk with tahini & honey to make a salad dressing or as a spread on your avo toastie. 

About the 1 year Fermented Shrub

Made by fermenting fruit for 3-4 months, then bottling the concentrated, fermented fruit juices.

Add this to iced teas or sparkling water for a refreshing drink, drizzled as a soaking syrup for cakes or trifles, whisk together with oil & vinegar as a salad dressing. Perfect for entertaining over the festive period.
