Ever wonder what sort of sweet treats would’ve been enjoyed before the conventional lollies were invented? We stumbled upon this delightful (and jaw breaking!) treat while working out the process of fully utilising a ferment. This packet of Lemon & Rose Crunchies with zingy, mildly sweet, and light floral notes, has been fermented in its own juices & organic raw sugar for 4 months before being decanted and dehydrated at low temperatures. The fermentation process which softened the hard peel of the lemons, and dehydration, allows this ferment to be kept for an indefinite amount of time.
The end result of our desire to fully utilise a ferment……a high in vitamin C probiotic sweet treat!
At the fermentery, we (GUTSY kids included) love these crunchies straight out of the packet. While this sweet treat can be a jaw breaker for some (this treat is still a work in progress), these crunchies can be blended up finely and sprinkled on pancakes glazed with maple syrup & peaches, adds a nice finishing touch on homemade chocolate, whizzed up with zaa’tar for a citrus kick or crushed & added into smoothies, granola or bliss balls.
