Gutsy Apple Radish Kimchi is made by fermenting local, organic veggies and spices in an oak barrel for 4 – 6 weeks. "Why," you may ask? To seed your gut with tangy, probiotic goodness!

4-6 weeks is the time it takes to produce the maximum number of probiotics before bacteria multiplication plateaus.  Over a 4-6 week period there is a serious amount of post-biotics produced through fermentation.  Post-biotics are the product of fermentation and include amino acids, vitamins and anti-microbial peptides.

We only ferment in oak barrels for flavour, sustainability and to minimise chemicals in our ferments.  As veggies ferment they become extra acidic and start to leach whatever it's touching.  We're definitely against fermenting in plastic as phthalates, BPA and more can start to contaminate our food.  These have a real negative affect.

Recipes and Serving Suggestions for Apple Radish Kimchi

Finally a something that the young and old can enjoy together! Packed with a subtle spicy punch it goes perfectly with anything. Think oozing grilled cheese kimchi toasties; kimchi tossed sweet potato and black sesame salad; Kimchi fried cauliflower rice;  Chargrilled corn on the cob;  Steak smeared with kimchi butter; Kimchi pizza with rocket; kimchi and roasted veggie quinoa bowl; oh, we can go on forever! The combinations are endless!

How to store Gutsy Kimchi

Keep your Gutsy veggies refrigerated before opening if possible. But if you can’t keep your kimchi in the fridge for a while, it’s not a big deal. Fermentation is a preserving process so Gutsy fermented veggies will keep for weeks out of the fridge. If you keep your kimchi out of the fridge it will keep fermenting. The only problem is that carbon dioxide is a by-product of fermentation. So if keep your Kimchi out of the fridge for too long, you may be sprayed with juice first time you open it. It’s not an unhealthy, just messy.

Once opened Gutsy Kimchi is best kept in the fridge. The only reason for this is to inhibit the growth of mould.

A Note on Shipping Living, Raw, Probiotic, Fermented Apple Radish Kimchi

Our Gutsy Fermentery is based in Brisbane, QLD. If you buy Apple Radish Kimchi online, we’ll ship it directly to your door anywhere in Australia. When we ship your kimchi we pack it into a thermal box with ice packs. This keeps the Apple Radish kimchi cool for a few days depending on the outside temperature.

The thing is that our Australian Summers get pretty hot, and if your package is traveling a long way your kimchi will eventually warm up. As per the storage instructions above, it doesn’t matter if your kimchi warms up, it’s actually a good thing (as far as probiotics go). Just beware, if you’re ordering in the middle of summer, and you live far away from Brisbane (Tas or WA) your fermented veggies might be a little fizzy when you first take off the lid. If this is the case, refrigerate the jar for a couple of hours before you open is. Hold it over a bowl the first time you open it and drink any juices that you catch (don’t waste them)!
