Cauliflower and spices fermented in an oak barrel for 4+ weeks. We ferment for probiotics, and postbiotics.  That's why we ferment for weeks and not days.  The longer fermentation goes on, the more probiotics are produced and the more postbiotics are produced as a byproduct.

We’ve made this only mildly spicy, we’ve added no fish sauce, oysters, shrimp or any other animal produce, and we’ve used cauliflower instead of cabbage…just because we can!


About Cauliflower Kimchi

Have you ever wanted a Kimchi that does NOT contain fish sauce, oysters, shrimp paste or cabbage? Then this product is for you! Gutsy Cauliflower Kimchi has been fermented for at least 4 weeks so it’s extremely high in probiotics. It has a rich, traditional flavour, but only a mild chilli warmth so you can actually enjoy the flavour.

Serving Suggestions for Cauliflower Kimchi

Cauliflower Kimchi is something that can be enjoyed by the whole family.  Eat it from the jar, add it to your kimchi pancakes, or even kimchi waffles. We love to eat this mild veggie ferment with our poached eggs, tossed into a roasted veggie salad (for a little zing), or as a side to chicken or fish.


How to store Gutsy Cauliflower Kimchi

Keep your Gutsy veggies refrigerated before opening if possible. But if you can’t keep your kimchi in the fridge for a while, it’s not a big deal. Fermentation is a preserving process so Gutsy fermented veggies will keep for weeks out of the fridge. If you keep your kimchi out of the fridge it will keep fermenting. The only problem is that carbon dioxide is a by-product of fermentation. So if keep your Kimchi out of the fridge for too long, you may be sprayed with juice first time you open it. It’s not an unhealthy, just sometimes a little messy.

Once opened Gutsy Kimchi is best kept in the fridge. The only reason for this is to inhibit the growth of mould.

A Note on Shipping Living, Raw, Probiotic, Fermented Cauliflower Kimchi

Our Gutsy Fermentery is based in Brisbane, QLD. If you buy Kimchi online, we’ll ship it directly to your door anywhere in Australia. When we ship your kimchi we pack it into a thermal box with ice packs. This keeps the cauliflower kimchi cool for a few days depending on the outside temperature.

The thing is that our Australian Summers get pretty hot, and if your package is traveling a long way your kimchi will eventually warm up. As per the storage instructions above, it doesn’t matter if your kimchi warms up, it’s actually a good thing (as far as probiotics go). Just beware, if you’re ordering in the middle of summer, and you live far away from Brisbane (Tas or WA) your fermented veggies might be a little fizzy when you first take off the lid. If this is the case, refrigerate the jar for a couple of hours before you open is. Hold it over a bowl the first time you open it and drink any juices that you catch!

There is plenty of product in the jar how ever it concerns me that there is not much brine, not enough to cover the product so worry that it will not keep well.

Love this stuff

Absolutely love this stuff. It’s a little bit fizzy and feisty when I first tried it. But I stuck with it and absolutely love it now. No longer constipated and less gassy.
