Miso Making Workshop - May 7th


Miso is a magical fermented paste originating from Japan and full of umami (earthy flavours) and can be used to flavour everything from soups to marinades, salad dressings and desserts. In this hands-on workshop, you will learn about the history and range of different types of miso, then, prepare to roll up your sleeves and learn the art of successfully crafting your very own soy-free miso - gaining up-close knowledge of Aspergillus oryzae (also known as kōji fungus) in the fermentation process. You will make a batch of your very own chickpea, citrus and rose miso to bring home with you, based on freshly crafted Australian rain-fed rice Koji made at the Gutsy Fermentery. You will also taste a delightful array of alternate miso’s and enjoy an afternoon tea with us of miso brownie trifle and a cuppa of matcha.

Cost includes: all ingredients, recipe, a glass jar full of miso to take home, instruction and sampling of different kinds of miso.

About Your Hosts

Our Gutsy workshops are specialised, where you get to go deep and learn about specific ferments or get your hands messy and bring home a jar of your work. These workshops are limited to small class sizes and are designed to allow you experience the joy of crafting your ferments under the guidance of experienced fermenters. They are facilitated by Wei’er Higgs and Dr Sarah Lantz, authors of Forage, Ferment, Feast: Tales of Food and Family, with Recipes for Restoring Gut Health, Connection, Healing and Wholeness. Wei’er is the Director of Gutsy Fermentery and Sarah is a clinical nutritionist and Gutsy Fermenter.
