Additionally, the more strains you consume the greater your gut diversity, which in turn better supports digestion, immunity, and inflammation response. The range across common fermented foods is significant: some products contain millions of CFU per gram, while unpasteurised, raw, oak barrel-aged products can reach hundreds of billions per jar.

The minimum CFU count considered meaningful in clinical nutrition research is around one billion (10⁹) per serve. That number should be your baseline when comparing products, because anything short of it is unlikely to deliver measurable gut health benefit regardless of what the packaging claims.

That puts kefir well ahead of yoghurt in terms of strain diversity. The presence of both bacteria and yeasts makes it genuinely broader in microbial coverage than any single-culture dairy option.

Plain, refrigerated milk kefir reliably contains live cultures. A practical starting serve is around 180 ml per day, building to 250 ml as tolerance improves.

4. Yoghurt: accessible and consistent, but a narrower strain profile

Commercial yoghurt almost always contains Lactobacillus bulgaricus and Streptococcus thermophilus as its core starter cultures. Only some products add L. acidophilus or Bifidobacterium on top, putting the typical yoghurt at two to four strains at most, compared to the dozens typically found in kefir. For a useful benchmark when comparing labels, international clinical research generally cites one billion CFU per 175 g serve as the threshold for a meaningful probiotic effect in yoghurt. How to read a label and know you're actually buying live cultures

The label language that confirms live cultures are present

The phrases that matter are "live and active cultures," "contains live cultures," "unpasteurised," or "raw and unheated". "Fermented" alone is not enough if the product was heat-treated after production.

The red flags that tell you cultures are gone

"Pasteurised" with no re-inoculation note means the live bacteria were destroyed post-fermentation. A long ambient shelf life without refrigeration all point to a product with no viable cultures. If the product has a press-button lid that is sucked down on the shelf but pops up when opened, this is also a problem.  The sucked-down button lid indicates that the product has been heated before screwing on the lid, with the resulting vacuum while cooling sucking the lid down. These aren't edge cases; they describe a substantial proportion of fermented foods found in supermarkets across Australia.

Added sugar : what to check before you buy

Flavoured yoghurts and commercial kombuchas frequently carry high added sugar. Compare per-serve figures across products and default to plain or low-sugar versions.

A practical serving guide by food type

There are no universal official serving-size guidelines for probiotic foods, but these amounts form a solid working baseline backed by clinical nutrition research:

  • Yoghurt: 150, 200 g per serve
  • Milk Kefir: 180, 250 ml per serve
  • Sauerkraut and kimchi: ¼ cup (roughly 45 g) per serve
  • Miso: 1 tablespoon per serve
  • Natto: 50, 80 g per serve

Aim for one serve per day to start, building to two serves from different sources as your tolerance improves. Some research shows the benefit of 6 serves of low-sugar fermented food per day. Consistency matters more than volume, daily or near-daily intake is the approach most consistently supported by clinical evidence, and regularity is the key variable.
