This is because bones are made up of 90% collagen, and as the bones are boiled the collagen is slowly extracted.  The longer bones are boiled, the more collagen ends up in broth.  At Gutsy we boil the bones for roughly 6 days to get all the collagen out that we possibly can. This collagen is especially good for your joints, bones and skin, leading to supple, elastic skin as well as healthy joints and other soft tissues.
