How is gelatine different from collagen peptides?

Both come from collagen, but they behave differently.

Collagen peptides are broken down further, so they dissolve into cold or hot drinks and don't set. Gelatine is less broken down, so it forms a gel when dissolved in hot liquid and cooled. Use peptides to stir into drinks and smoothies. Use gelatine when you want something to set.

How do I use gelatine?

  1. Bloom: sprinkle the gelatine over a small amount of cold water or liquid and leave it for 5 minutes until it swells.  This minimises clumping later.
  2. Dissolve: stir it into hot (not boiling, or setting power is weakened ) liquid until fully dissolved.
  3. Set: pour into a mould or container and refrigerate until set, usually 2 to 4 hours.

How much? As a guide, about 1 level tablespoon (roughly 10g) sets 2 cups (500ml) of liquid into a soft jelly.

Gelatine won't set with fresh pineapple, kiwi fruit, papaya or figs unless they're cooked first, because their enzymes break it down.

Gelatine serving suggestions

Gelatine is neutral in flavour, so the ways to use it are endless. Here are some ideas.

  • Make homemade gut-friendly gummies with fruit juice and a little honey.
  • Set a bone broth into a savoury jelly, or stir a spoonful into soups and stews for body.
  • Make panna cotta, mousse, or a layered fruit jelly.
  • Add to a smoothie or hot drink: bloom it, dissolve it in hot liquid first, then mix in.
  • Use it to thicken sauces, gravies and pâtés.
  • Pair it with our fermented veggie juice or kombucha for a probiotic jelly. Add the juice after the gelatine has cooled so you don't heat the bacteria.

Tip: it's not fermented, so feel free to heat it. Add any live ferments once it has cooled to roughly body temperature.

What's in gelatine?

100% protein, with no carbs.

Amino acids include: glycine, proline, hydroxyproline, alanine and arginine.

Why is gelatine essential for a resilient gut?

Our guts are lined with a thin mucosal lining. This lining is the home for our microbiome. It has the important job of letting water and nutrients pass through into our bloodstream, while keeping large, undigested or unwanted particles inside the gut.

The collagen and amino acids in gelatine, including glycine and proline, are the building blocks our gut lining needs. Gelatine helps to feed your gut lining and support its integrity, so it stays strong and supple.

As a natural protein, gelatine may also promote skin, joint, hair, nail and gut health.

Gelatine is also a traditional food. Before supermarkets, people made broths and jellies from the skin, bones and joints of animals, and gelatine is what makes a good broth set.

Why beef skin gelatine (Type B)?

Our gelatine comes from beef (bovine) skin. "Type B" refers to how it's processed. It's a purified protein made by partly breaking down collagen, and it's light in colour, dissolves in hot water into a clear solution, and has a gentle savoury taste.

It's derived exclusively from beef skin that is free from BSE (mad cow disease) and recognised as safe under EU scientific steering committee, OIE and FDA guidelines, and it complies with the Australia New Zealand Food Standards Code (FSANZ). It's exclusively sourced from grass fed, free range beef, and it's free from antibiotics, hormones and glyphosate.

Not suitable for vegans or vegetarians.
