Jun Brewing Kit (Honey Green Tea Kombucha)
We love Jun (it rhymes with nun or noon depending on who you ask) – its light, effervescent fermented taste is made with green tea and raw honey, and like kombucha, you need a SCOBY (symbiotic culture of bacteria and yeast) to brew Jun.
Jun is a living beverage that is fermented using a blend of organic green tea(s), a SCOBY (or Mother) and raw honey. The SCOBY consumes the tea and sugars in the honey, and converts them it into a range of gut boosting probiotics, organic acids and enzymes, thus creating an effervescent, low-sugar and low-caffeine beverage with a slight fermented tang.
- 4 or 5 litre Brewing Jar
- Fresh Jun Starter Culture – SCOBY (Symbiotic Culture of Bacteria and Yeast)
- Certified organic green tea (enough for your first batch).
- Approx. 300ml starter Jun liquid (Or about 10% of the brewing vessel)
- 2 cups of local Brisbane honey
- Cloth cover (do not reapply the jar lid as the SCOBY needs to initially breathe). We have provided some organic muslin or linen which allows your SCOBY to breathe, but you can also use a tea towel or a natural cloth to cover your vessel.
- Elastic band - but you can also use natural cotton or hemp string
- Simple instructions (emailed to you)
Make sure you look after your beautiful SCOBY as she can give you a life time of brewing.
NB: We grow our SCOBY's to be multifunctional, so you can move your brew to kombucha rather than Jun if you ever feel inclined.
